Zucchini Burgers

Zucchini Burgers
- 1 medium zucchini
- 1 small yellow onion
- 1/4 tsp old bay seasoning to taste
- 1 tsp Worcestershire Sauce
- 1 tsp dry mustard
- 1/2 tsp. freshly ground black pepper
- 1 Egg substitute (egg replacer or if you’re not vegetarian/vegan you can use egg whites) to serve as a binding ingredient. *I used 1 tbsp. freshly ground flax seeds.
Directions
- Grate the zucchini and onion (I use a Food Processor)
- Add grated zucchini and onion to a mixing bowl
- Add old bay, worcestershire sauce, dry mustard, and black pepper.
- Mix Well
- Form into patties
- Place patties on baking sheet and let chill in the refrigerator for thirty to sixty minutes
- Add vegetable oil to skillet
- When the skillet is hot add zucchini patties
- Cook for three to four minutes on each side
- Serve and enjoy
I made these burgers two days ago and they were so good I made them again last evening. My daughter loved them immensely. The first time I made them an omni buddy was over and he gobbled these up.
He said they made him think of seafood. I bet it was the Old Bay Seasoning. Nutrition is very important to me but equally important is creating dishes that actually taste good.

Now this is the recipe you used the flax seeds in, right? About how much did you use? Did you soak them for any amount of time before or blend/grind them???

I loved fried zucchini so I decided to check out your recipe. It sounds a lot like the zucchini that I fry with salt and flour, dipped in egg wash and placed in pan to brown and cook.
I may have to try your recipe someday.

I tried those scrumptious zucchini burgers and they were fab! We grilled out Saturday night and the meat eaters in the house had hot dogs on the grill…. I was getting hungry and got out my zucchini from the farmer’s market and made their mouths water!
It was very tasty and reminded me of salmon patties…

They got wetter and wetter and I couldn’t make patties. I used real egg.

My apologies for the delayed response. I responded to you via email after I saw this reply but not sure if you got my response. hmm, I didn’t use a *binder* for this recipe but you could use eggs to bind the ingredients or in my case I occasionally use two tablespoons of freshly ground flax seeds. Occasionally I set my burgers to chill in the refrigerator and I believe I did that for this recipe. I’m sorry they did not turn out well. They are very good. Did you salvage the burger ingredients? You could have used it in a soup, stir fry, stuffing a cavity such as tomatoes or green peppers.
What a great idea for preparing zucchini. I will have to give this a try this year. It will be my first attempt at growing zucchini.
