Red Beans & Brown Rice ~ Vegan

Red Beans & Brown Rice
Red Beans & Brown Rice
- 1 quart (4 cups) dried red beans
- 2 quarts water
- 1 carrot, chopped
- 1 large onion, chopped
- 1/2 cup mushrooms
- 3 cloves of garlic freshly ground
- 1 bay leaf
- pepper, to taste
- salt, to taste
- 1 cup cooked rice
- Stir constantly
- Add salt & pepper to tast
Directions:
- Soak the beans in cold water (I usually do this overnight)
- Heat the beans in 2 quarts of water and let boil for 2 hours
- When the beans are tender remove them from the pot
- In a skillet add a teaspoon of olive oil
- Add onion, mushrooms, and garlic cook until yellow onions are clear
- Add 1 cup of cooked rice
I made this vegan dish last week. My daughter loved it. I only use brown rice in our meals. Why? It’s nutritional value is higher than white rice. Now that I think about it my daughter has never eaten white rice. This simple meal was a special treat for my daughter because we haven’t had rice in months.
I didn’t do this purposely there is such a large variety of things we can eat that at times I forget about certain items such as brown rice. As a vegan my choices aren’t limited. Now that I think of it we haven’t had red beans in several months either.
My daughter ate two large bowls of this meal and she requested more the next day. Today I believe I’ll make some type of veggie burger. I’m actually thinking of putting them on the grill. I know my daughter would love that and so would I.

I have yet to eat a bowl of just beans and rice. At first, as I was becoming more vegetarian all I could think of was all the foods I was giving up. But now I see all kinds of new things and new ways to have healthier foods all the time - your site is helping me so much in that direction! Nobody wants to feel their options are limited. Now I know another simple meal I can fall back on when I am running low on ideas. Thank you, Opal.
I love beans and rice. I really enjoy brown rice too but I do like a little jasmine or basmati rice now and then.
I have a dish you all mike like. Perhaps I will post it in the Cafe someday.

This version is delicious. I like my rice “sticky”. I soak and cook my brown rice. I made a similar version last week but I did not add beans. I had family over and it did not last long. Quite a few are die hard carnivores but even they scarfed it down.
I agree no one wants to have limited choices.
To be honest if it was just me my meals would be mainly mono meals but I’m trying to introduce my daughter to a variety of foods, tastes, and textures so I do add a variety. Perhaps one day I’ll be able to post what I eat every day? I can dream, right?

I occasionally toss in jasmine and basmati also. Yes you should post your recipe. I would love to see it.
This is a new jazzier option to plain beans and rice. I would like to try it this weekend.
