Vegan Curried Sticky Rice & Beans

My daughter calls this vegan curried sticky curried rice and beans. The beans in this dish are garbanzo beans. I let them soak overnight before adding them to a pot. I really need to invest in a pressure cooker. It would definitely cut down on my cooking time.
I made this dish last week and unfortunately it did not last too long. I was thinking I would have leftovers but I had family stop by and it did not last too long. My daughter has been asking for apple crisp. I haven’t made it in a long time. I promised her I would make it later this week. Apple crisp, like many other dishes can easily be “veganized”.

Hooray for curry! I have an idea - you can freeze your leftovers and I’ll pay to have them shipped to my house. (Something tells me that leftovers in your home are rare.)

Curry is yumalicious! Leftovers don’t last long in my home. I have a lot of “pop-in” visitors. I think they plan it.

sticky rice curry, looks yummy. I only tried sticky rice as dessert here in thailand and the association remained this way. Great to see the different ways of using this rice.

Thanks! I love sticky rice. I believe I’ve had it as a dessert once that was a while ago. It was delicious. I always enjoy seeing diversity in food.

Oh, how I love sticky rice! I have yet to make it since I have been home…but, while I was in Thailand and Laos, I ate it as much as humanly possible. I really like it with mango, cooked in coconut milk and sugar! But, it is scrumptious with curry as well.
