Sticky Curried Rice & Beans

My daughter calls this vegan curried sticky curried rice and beans. The beans in this dish are garbanzo beans. I let them soak overnight before adding them to a pot. I really need to invest in a pressure cooker. It would definitely cut down on my cooking time.

I made this dish last week and unfortunately it did not last too long. I was thinking I would have leftovers but I had family stop by and it did not last too long. My daughter has been asking for apple crisp. I haven’t made it in a long time. I promised her I would make it later this week. Apple crisp, like many other dishes can easily be “veganized”.

  1. Hooray for curry! I have an idea - you can freeze your leftovers and I’ll pay to have them shipped to my house. (Something tells me that leftovers in your home are rare.) :D

    Curry is yumalicious! Leftovers don’t last long in my home. I have a lot of “pop-in” visitors. I think they plan it.

    sticky rice curry, looks yummy. I only tried sticky rice as dessert here in thailand and the association remained this way. Great to see the different ways of using this rice.

    Thanks! I love sticky rice. I believe I’ve had it as a dessert once that was a while ago. It was delicious. I always enjoy seeing diversity in food. :-)

  9. Oh, how I love sticky rice! I have yet to make it since I have been home…but, while I was in Thailand and Laos, I ate it as much as humanly possible. I really like it with mango, cooked in coconut milk and sugar! But, it is scrumptious with curry as well.
