Stir Fry Veggies

Stir Fry Veggies
1 cup swiss chard
1 medium onion
4 cherry tomatoes
3 medium potatoes cubed
1/2 tsp freshly ground peppercorn
1 tsp. raw coconut oil
*add celtic sea salt to taste

Directions
1. Add coconut oil to skillet
2. Add yellow onion saute until clear
3. Add potatoes cook until soft
4. Add tomatoes, peppercorn, and sea salt
5. Stir well
6. Set off of burner
7. Serve & Enjoy!

Do you know this wasn’t supposed to be stir fry veggies? I made this dish a few mornings ago I had every intention of making simple hash browns; however, as I opened the refrigerator I looked at some of the veggies I had lain around and I decided to add them to the dish. I’m glad I did. My daughter loved this dish and it didn’t last long.
