Stir Fried Vegetables & Rice

I made this about thirty minutes ago not counting the rice cooking time it took about 10 minutes to make. I didn’t measure what I put into this dish. I’m giving a rough estimate.

Stir Fried Vegetables & Rice

Ingredients
1 cup cooked brown rice
2 portobella mushrooms finely chopped
1 medium onion finely chopped
1 medium tomato chopped
1 tsp coconut oil
1 tsp celtic sea salt

Directions
1. Add coconut oil to warm skillet.
2. Add onions & saute until soft
3. Add portobella mushrooms & stir
4. Slowly add the rice
5. Stir
6. Add tomatoes, stir
7. Turn off burner
8. Add to serving dish & add salt to taste

This makes about two cups. My daughter loves it.

    It’s still hard for me to get into the habit of writing down the exact measurements for my recipes I didn’t do it with this one, but I gave a rough estimate of how much I used however I’m getting better, and soon it won’t be an issue. :-)

  5. I made this dish Sunday and it was great, light, and tasty and very filling. I had the leftovers for lunch on Monday.

    I’m glad you liked it. That’s one of the reasons I like it. It’s light! I had some leftovers. I made sandwich wraps for my daughter. I used pita wraps, added veggies, and tomatoes, sliced up some fresh onion…my daughter loved them!
