Stir Fried Vegetables & Rice
I made this about thirty minutes ago not counting the rice cooking time it took about 10 minutes to make. I didn’t measure what I put into this dish. I’m giving a rough estimate.

Ingredients
1 cup cooked brown rice
2 portobella mushrooms finely chopped
1 medium onion finely chopped
1 medium tomato chopped
1 tsp coconut oil
1 tsp celtic sea salt
Directions
1. Add coconut oil to warm skillet.
2. Add onions & saute until soft
3. Add portobella mushrooms & stir
4. Slowly add the rice
5. Stir
6. Add tomatoes, stir
7. Turn off burner
8. Add to serving dish & add salt to taste
This makes about two cups. My daughter loves it.

Thanks for this delicious recipe. I will try to make it on weekend. The brown rice ingredient fits for dieter like me :).
Cherry,
You’re welcome!
It’s still hard for me to get into the habit of writing down the exact measurements for my recipes I didn’t do it with this one, but I gave a rough estimate of how much I used however I’m getting better, and soon it won’t be an issue.
that looks so awesome! I have been so into Rices lately!
I posted about one of your previous ones:

I made this dish Sunday and it was great, light, and tasty and very filling. I had the leftovers for lunch on Monday.
Harmonia,
I’ll check it out.
Shelia,
I’m glad you liked it. That’s one of the reasons I like it. It’s light! I had some leftovers. I made sandwich wraps for my daughter. I used pita wraps, added veggies, and tomatoes, sliced up some fresh onion…my daughter loved them!
Very good.
