I made this dish well over a year ago. I prepared this while I was on vacation in South Carolina. We stayed in a condo that had a full kitchen. Yes, I actually prepare meals, if I can, when I’m vacationing. I love uncooking/cooking. The vegan sausage was homemade. It didn’t last long. Relatives dropped by and although they aren’t vegetarian this didn’t last long. I thought I would have leftovers.

I don’t have the exact recipe. It’s made with marinated vegetables (pureed and chopped), freshly ground flax seeds, yellow onion, sage, cayenne pepper, Italian seasoning, and a few other spices that I cannot think of presently.

When I prepare make my burgers an sausages I stay away from textured vegetable protein (tvp), soy, and wheat gluten because I personally don’t think they have a lot of nutritional value. I use vegetables (chopped and pureed.) Occasionally I’ll grind up nuts and seeds and add it to creations. Fresh spinach greens accompanied this dish along with a tall frothy fruit smoothy.

As I mentioned in my Raw vegetable wrap post I’m on a cleanse this week so my meals will be liquid. I started my cleanse yesterday.

  1. That looks fabulous! I like that you are able to make these “sausages” without any mock meat or fillers. I rely heavily on wheat gluten because it is making my adjustment to vegetarianism a lot easier (also it provides some protein). But maybe eventually I’ll just be able to do what you do. I see mushrooms in that dish too, now that I look again. Yum!!!!!!!!!!!! If you ever make this again, you really need to write down a recipe. You know, for me. :roll: :grin: (At least I’m honest when I’m being selfish - you gotta give me credit for that!)

    I’ll try to make it within the next few months.

    This vegan sausage had protein. It was made of vegetables & grains. They contain protein. It was also sitting on a bed of spinach. Spinach is considered a high quality protein. It’s important to remember that many vegetables contain protein. We don’t need nearly as much protein as they try to put on us. It’s harder for the body to assimilate animal based protein which would explain why the amounts that are required are higher. Personally I think those amounts are still high.

    I do think that some of the famous vegetarians/vegans within the spotlight promote fake meats entirely too much. When you think about it’s usually flour or soy based product. How in the world is a filler healthy? Using it occasionally is fine but if one uses it every constantly I do think healthier alternatives are available. There are a lot of whole food cookbooks out there so even if a person isn’t vegetarian they will be able to make healthy choices. I’ve met a few vegetarians/vegans that were unhealthy. They ate “veggie junk food”.

    The majority of the food you’ll see on The Raw & The Cooked is whole food cuisine. Simple. Nutritious, Delicious. :-) I feel strongly about it and I feel that indulging in too much junk can lead to problems later on in life. We really need to rethink the way we view food.
