Sauteed Garbanzo Beans & Greens

Vegetables:  Tomatoes & Greens

Organic Tomatoes & Greens

Sauteed Garbanzo Beans & Greens

  • 1 cup cooked garbanzo beans
  • 2 cups greens
  • 1 cup spinach
  • 3 cloves of garlic freshly ground
  • 3 small tomatoes
  • 1 cup vegetable broth, water, herbal tea
  • 1 large yellow onion
  • salt to taste

Directions

  1. In a skillet sauté yellow onions until clear
  2. Gradually add garbanzo beans (chickpeas)
  3. Gradually add liquid
  4. Add garlic
  5. Add greens and tomatoes
  6. Serve & Enjoy

The produce shown above came from my garden. It’s all organic produce. I don’t use a lot of spices with my meals. I’ve found over time eating a whole food/high raw diet that I can pick up more of the natural flavors that are present in the vegetables that I prepare.

The greens are added within the last few minutes of cooking time. I much prefer the lightly steamed. The majority of the vegetables come from my own garden. They are picked within minutes of me making my meals. The produce is bursting with flavor.

The beans were cooked earlier in the day. How long did this meal take to make? Using the cooked beans this meal was ready in under 10 minutes.

  1. Hello Opal. I’ve always wanted to the do a raw food diet of some sort, except that buying quality vegetables are so expensive in my neighborhood. One of these days, I’m going to start planting …..

    The tomatoes look fantastic, and I bet they taste better than store bought.

  3. Home-grown produce is the way to go. Vine-ripe tomatoes are literally vine-ripe. It’s fun because my kids will pick them and eat right there in the garden. Nothing like a freshly picked tomato, warm from the sun. :)

    I agree. I love home grown produce. We do the same with our vegetables/fruit. We eat them right off the vine.

    Opal, I’m not sure if you are a big fan of eggplants, but do you have a recipe you like? My husband just loves it.
