Raw Zucchini Pasta
1 medium zucchini
1 small onion
2 medium tomatoes
3 garlic cloves freshly ground
1/2″ ginger freshly ground
1/4 tsp. celtic sea salt

Pasta Directions
1. Using a spiral vegetable slicer make your zucchini noodles
2. Set aside

Pasta Sauce
1. Add tomatoes to food processor
2. Pulse
3. Add ginger, garlic, and celtic sea salt
4. Pulse

Preparation
1. Place zucchini noodles in serving bowl
2. Gradually add tomato sauce
3. Combine with pasta tongs or forks
4. Serve & Enjoy
3. Pulse

This makes a small amount of pasta. I’d say about two bowls (4 cups.) This amount is perfect for my daughter and myself. If you want more toss in more zucchini and tomatoes. This was made in less than five minutes. It’s simple but extremely delicious.

Here’s a close up of the pasta. Since the zucchini is thinly sliced I think it changes the taste. I enjoy eating zucchini raw but this is a very nice alternative. My daily intake is mainly raw foods. I don’t eat it too lose weight. I’m petite but it sure does taste good and it’s a healthier alternative to the traditional pasta.

If you’re a pasta lover who wants to find a healthier alternative and keep your noodles at the same time you really should give this a try!
