Mushroom Stir Fry

Mushroom Stir Fry

Ingredients

1 cup of portobella mushrooms, cut up
1 medium sized onion, cut
1/2 cup tomatoes
*add celtic sea salt to taste

Directions

1. Add tsp of olive oil or coconut oil into skillet
2. Add onions cook until soft
3. Add mushrooms and let cook for a few minutes stirring constantly
4. Add tomatoes and turn off let simmer
5. Serve & Enjoy!

I made this late last evening (around 11:00 p.m.) my daughter was still awake and she was hungry. This was made in less than eight minutes. It was quick, simple, and in her words…”It’s Vegan-Licious, Mommy!”

    You surely can! My daughter loves tofu and I’ve made it that way also. I also freeze my tofu before using. It changes its consistency, and I find that it absorbs marinade much better.

  3. I’ve never heard of freezing tofu, but I’ll give it a try. My kids like it a lot so I’m looking for more recipes on how to prepare it.

    It gives it a chewier consistency. My daughter loves it. It’s the perfect consistency for tofu scramble. :razz:

    I’m glad your family liked it. It’s simple, healthy, and delicious.
    I will be purchasing a few packs of tofu today for next week. It will be a quick filler ingredient to add to produce. I’m planning on making quick and easy meals while we are on vacation as always, lol. They don’t seem to have tofu in Summerton, South Carolina. I’ve checked several grocery stores. However, they have lots of fresh locally grown produce. Yummy!!! :grin:

  7. YUMMY! I am going to make something like this for the 4th to take to the rents, I think! I had some marinated shrooms on a sub tonight…it was yummers!
