Feeling Green: Simply Divine Raw Veggie Sandwich

Simply Divine Veggie Sandwich

  • 1 romaine lettuce
  • 1 cup leafy green lettuce
  • 1 cup baby spinach
  • 1 cup freshly grated carrots
  • 1/4 - 1/2 cup sweet onion
  • bread or greens for wraps

This makes a fair amount of food. I keep it in my refrigerator and snack on the fresh vegetables throughout the day. It’s a healthy alternative to the snack foods that many people snack on. It’s healthier, and lower in calories.

Condiments (optional)

  • Sunflower seed nut cheese
  • Mayonnaise
  • Agave Mustard

Directions

  1. In a mixing bowl combine greens and onions
  2. Serve on bread (you can also use kale or collards to make an all raw veggie wrap)
  3. Spread mayonnaise and sunflower seed nut cheese

I made this recipe for my daughter’s lunch. Although the greens are delightful on their own I did think the condiments added a different twist to an all time favorite. I served her sandwich on homemade rye bread. The mayonnaise, mustard, and the sunflower seed cheese were also homemade.

My daughter loved it and ate two sandwiches. I used kale which served as a wrap for my sandwich filling. I’ll be including the recipe for the mayonnaise and the sunflower seed cheese in a later post. The sunflower seed cheese had a little kick because I added fresh ground black pepper and a tiny amount of garlic. It turned out lovely and my daughter loved it.

  1. So…I know you don’t usually follow recipes but I was wondering if you kept track of measurements for the ingredients of the Mayo and Mustard???

  2. That sandwich looks divine. I love the classic sandwich for lunches and with a cup or bowl of soup on a crisp fall day what could be better? I’m looking forward to your recipes as I’d love to be able to make something with sunflower seeds. Yum.

    That’s great! Let me know how it turns out. I always encourage people to take baby steps when making changes in their eating habits. At times change in eating can be very hard for some people. That’s understandable some people have been spending years eating a certain way. It can take a while to break unhealthy eating habits.
