Creamy Black Bean Peanut Soup

2 cup cooked black beans
2 cups (or more) of water
1 cup cooked black eye peas
1 medium onion
1 tsp ground coriander
3 tbsp creamy peanut butter
2 tbsp nutritional yeast flakes
2 cloves of freshly ground garlic
1 tsp freshly ground ginger
1 tbsp olive oil
Directions
- Add pot to stove
- Add olive oil in pot
- Place onions, garlic, ginger, and coriander in pot cook until onions turn clear
- Add beans, nutritional yeast, and one cup of water
- Stir constantly so the ingredients won’t stick gradually add more liquid until you reach the desired consistency. I like my soups thick so I don’t add too much water.
- Add peanut butter stir until smooth
- Enjoy!
You could add vegetables while you are preparing this dish and would be delicious. I prefer adding fresh chopped vegetables after the meal has been prepared. Last evening I was inspired to create this dish because of the cool weather we had. Fall is my second favorite time of year. My first favorite season is winter. I’m eagerly awaiting cooler weather, harvesting fall vegetables, and snuggling up outside with my daughter watching the sunsets and eating a bowl of creamy black bean peanut soup.
This was the first time my daughter had this version and first she did not want to try it. However, I told her to just take one bite if she didn’t like it she would not have to eat it. She loved it and ate two and a half bowls. The rest she declared would be eaten today.

This looks interesting…I am trying to imagine the black-eye peas with the black beans…not a mix I would think to do myself. I might have to try this sometime.

I love black eyed peas but if you don’t care for them you can just use black beans, or even add chick peas. I’ve used both and they are all delicious. I don’t think I ever tried it with black beans so I thought I would check it out. I loved it!
I am certainly going to try this one!!! I don’t buy a lot of Black eyed Peas so I think it would be a great way to add them more frequently into my diet…I like them…I just don’t always think about them. AND they aren’t always available believe it or not (locally). So…incase there is one of those times where they aren’t available…what other bean would work in it’s place??? jw But I do intend to try it with the black eyed peas when I can…
Of course if I would have read Beth’s comment and your response above I would have already seen that you answered that question…sigh…sorry about that.
I like black-eyed peas once in awhile…it was more the combo I wondered about. lol They have such a distinct flavor and texture.
It’s ok Harmonia…no one every listens to me.
