Avocado Wrap

1 avocado, diced
1 small yellow onion finely chopped
4-6 romaine lettuce leaves

I didn’t know how badly I was craving avocado until I was in the grocery store this morning. I bought three and prepared a simple dish with avocado and yellow onion.

I wrapped it in romaine lettuce. The lettuce was freshly picked from my garden. I’ll take pictures later, but I think I’ll add grated carrots to the mix. I want a hint of sweetness. It was a simple dish, and my daughter, as well as I, loved it!

  1. How ironic! I woke up thinking about avos this morning and made a fresh guac with tomatoes, cilantro, red onion, garlic and lime juice. I wrapped it up into lettuce leaves and ate it for breakfast! Reading your post made my mouth water for more…can’t wait to get home and eat some for dinner.

  6. Some people won’t like this because of wheat and dairy, but on a similar note:
    2 slices wheat berry bread
    cream cheese
    avocado, sliced
    hummus, liberal
    alfalfa sprouts
    black olives, sliced
    grated carrot
    jalapeno or serrano slices

    My favorite sandwhich. When I lived in Denver in the mid 80s some health food restaurant must have had a deal with the local 7-11 franchises, because all the 7-11s carried these fresh in the cooler. I was hooked and still am.

    I have seen similar things in our 7-11’s. I live in Maryland. I don’t think anyone will have a problem with it although I’m vegan I don’t expect everyone to eat the way I do.

    I don’t think I’ve ever had a serrano pepper before.

  8. A little hotter and perhaps less flavorful than a jalapeno. Very prolific in Mexico. More widely used throughout Mexico than the jalapeno.

    Thanks! I’ll have to check it out. When I’m in the grocery store I usually select the habanero, jalapeno, and banana peppers. I’ll try them out next time I go grocery shopping. I love spicy food.
