A Mixed Bag: Sauteed Vegetables & Fruit

Sauteed Vegetables & fruit

Sauteed Vegetables & Fruit
1 medium zucchini cubed
1 medium onion sliced
1 cup of mushrooms
1 plantain
1/2 tsp celtic sea salt
freshly ground black peppercorns

Directions
1. Add 1 tsp of olive oil or coconut oil to the skillet.
2. Add onions & mushrooms, stir
3. Add zucchini, stir
4. Add plantains, stir
5. Dish. Serve. Enjoy!

I made this a few minutes ago. It took me under ten minutes to make this meal. Yes that includes preparation time. On a whim I decided to add plantains to the mix. I’m glad I did. My daughter will love this meal. She’s currently sleeping. I think red bell peppers would have been a welcome addition to this meal, but it does fine on its own. It’s taste an receives high marks on its nutritional value.

It’s a simple but delicious vegan dish. I hope you like it.

  2. Neato! I would do them minus the plantains because we don’t have them around here…I don’t think I have even had one now that I think of it…how do they compare to bananas? Better??? I hope.

    In some ways, it reminds me of banana, but it’s not as sweet. I’ve made African fritters with plantain I think I’ll make those along with raw plantain chips later today. I’ll post the recipe. You should try them out. The last time I made the chips I added a tiny amount of salt. It was a healthier version of the potato chip. Good stuff!

    Yes I have a recipe website. I’ve had it for almost a month. Having this website actually makes me “think” about what I put into the recipes I create.
